About Barbat Masala
Welcome to the culinary secret of the Gwalior Royals – Gwalior Shahi Barbat Masala which is a special mix of 20+ high grade whole spices, that are hand picked and selected with great care and patience. The whole spices are sourced from Andra Pradesh, Karnataka, Madhya Pradesh, Uttar Pradesh & Sri Lanka. It is then roasted and ground using traditional methods to preserve the natural oils and unique aroma. Best known for it’s distinct dark colour and smoky depth, it creates the perfect rustic, spicy gravy that brings the true taste of every dish it creates.
Gwalior Shahi Barbat Masala represents heritage, traditions and lineage of the Royalty of the soil. This unique blend is most famous for its ‘’Lamb Barbat’’ which was traditionally cooked on a mud/clay Stove (chulha) so as to slow cook the lamb and release the most aromatic and delectable flavours. The Barbat Masala, when added to Aloo Mattar, Dal Tadka, Kadhai Paneer, or Bharwa Baingan, it builds layers of flavours that are warm, rustic and deeply fragrant. The uniqueness, USP, of this masala is that when using Barbat Masala, there is no need to add any other masala or taste enhancer. Awad Food Products' most treasured recipe, Gwalior Shahi Barbat Masala, is a traditional secret passed down through generations.
For the past decade, the secret of this legendary blend has been safeguarded by our founder's father, Mr. Jayendra Rao Awad. He personally traveled to markets across India, hand-selecting only the finest whole spices with an expert eye and uncompromising standards. Each year, he would prepare small batches of this masala—not for sale, but for family and close friends.
Word spread. The aroma, the flavor, the depth—it was unlike anything else. Soon, friends and family began placing orders, and the demand grew beyond what one man could fulfill.
That's when Mr. Sambhaji Awad, the next guardian of this heritage, decided it was time to share this treasure with the world.
