Karela bharva

ingredients
  • 250 gms karela (bitter gourd)
  • 20 gms ginger garlic paste
  • 100 gms onions (ground to a paste)
  • 20 gms / 1 heaped tbsp Barbat Masala (ground to a smooth paste)
  • Imli pulp – 1 tsp
  • Jaggery pulp – 1 tsp
  • Salt to taste
  • 100 gms oil for cooking
  • Fresh coriander leaves (for garnish)
instructions
  • Peel karelas roughly.
  • Apply haldi and salt, keep for some time, then boil in water till 3/4th cooked.
  • Fill the karelas with Barbat Masala.
  • Heat oil in a kadhai.
  • Add onion paste and ginger garlic paste, cook till golden brown.
  • Add remaining Barbat Masala paste and fry till oil separates.
  • Add the filled karelas to the kadhai and cook well.
  • Add tamarind pulp, jaggery pulp, and salt to taste.
  • Garnish with fresh coriander leaves.
